Pancake Breakfast: the perfect recipe to start the day with energy and flavor!
When I wake up full of energy and ready to take on the day, that's the day for a pancake breakfast. No one can resist American pancakes, or hotcakes, as they are also called. Whether you're a foodie or not, this recipe will make you a star for a day. Imagine how much of a hit this will be with the kids or with some friends on a Sunday morning in a country house. I have verified that if it is announced in the morning that there will be pancakes for breakfast, there will be more than one volunteer willing to help set the stage.
Many of you have asked me for the recipe after seeing the photos posted on social media. Keeping my promise to post the recipe, here it is!

Setting a table with care is a fundamental part of starting the day with joy.
First things first, put on your apron and organize your ingredients. The quantities below are for two people and make about eight pancakes depending on the size.
I make this recipe on a gas stove. It can also be done on a ceramic hob, and I mention this because cooking times can vary from one type of stove to another. Here you will have to use your intuition and a bit of imagination.
Preparing the pancakes.
Ingredients for two people.

1 large egg

1 cup of flour

1 cup of milk

1 tsp of baking powder

1 tsp of vanilla

1 pinch of salt

The ingredients to prepare the pancakes include flour, milk, baking powder, vanilla extract, and salt.
Pancake preparation.
Mix all the ingredients in a bowl and stir with a whisk until the mixture is lump-free. Let it rest for five minutes until the leavening agent develops.



The recipe preparation is simple and quick, but it is essential to let the mixture rest for a few minutes so they come out fluffy.
Next, place the pan over medium heat with a few drops of olive oil, wiping with a paper towel to remove excess oil to prevent smoke. You may need to open a window or use the extractor fan during the process. With a ladle, pour in the mixture to form the pancakes; leave over medium heat until they are covered with bubbles (this can take 3 to 4 minutes) and you can flip them.
As I make them, I usually stack them in a tower so they keep each other warm, or I put them in a warm oven. The result is fluffy discs with a diameter of approximately 12 cm.

They might not come out perfectly shaped the first time, but they are just as delicious.
This recipe must be religiously tried with Canadian maple syrup. Given the high price of this ingredient, it might be a good idea to master the recipe first to "experiment with water instead of champagne." Beware of cheap imitations or products marketed as "pancake syrup." These products are full of fructose, corn syrup, and artificial maple extract, and are not a healthy recommendation.
Instead of maple syrup, you can use agave syrup, a natural syrup extracted from agave, the tequila plant.
I recommend agave syrup instead, a natural syrup extracted from agave, the tequila plant. Okay, you caught me, I also like to treat myself to a good reposado tequila from time to time. You can find agave syrup in any supermarket.
Honey is another substitute for syrup. Try to serve a high-quality, unadulterated natural honey.

A picture is worth a thousand words.
They can also be served with butter, jam, blueberries, raspberries, banana, raisins, apple, and pear. There are no rules here!
